Homemade Coffee Creamer

It happened friends! I went to grab my favorite coffee creamer and it was gone. The empty bottle lay in it's final resting place. The garbage. Perhaps we made to many french toast sticks or perhaps I just drink to much coffee. Yikes! I really, really wanted some coffee. I do not drink coffee without creamer.  I saw a sign recently that said, I like my creamer with a lil bit of coffee. That describes me perfectly.  Anyhow, I pondered a trip to the store, but that would require a list of must-do's beforehand, and I just wasn't feeling up to it. I decided to get a little creative and try to master the art of making my own. Did I master it? Probably not, but I did manage to make some and it did turn out pretty darn tasty.

I had to use nonfat evaporated milk. I realize that I could have used sweetened condensed milk and skipped the sugar, but with no trips to the store, I had to use what I had.

Here is the easier condensed milk version

Want a little more flavor? Try these variations.

Yummy & Easy French Toast

Ever had those mornings where you are hungry but not sure what for? This morning I was sitting having my first cup of coffee, pondering what I wanted. I knew I was hungry, but nothing sounded good. Well, my daughter walked into the kitchen and declared that she was craving French toast. Hmmm... French toast did sound pretty amazing and it had been awhile since we have had some. She asked if she could make it. She is eleven and although she helps me a ton in the kitchen, I wondered if she would be able to handle it on her own. pffttt.. Handle it? She rocked it! They were absolutely delicious and she used my favorite creamer, Coffee-Mate French Vanilla.

(Extra vanilla is optional)

Banana Muffins - Recipe

Hello Friends! Recently, I purchased a couple bags of bananas at a very good price. I just couldn't pass them up. Well, forward a couple days and we had a ton of mushy ones. Mushy ones? No problem. My youngest daughter and I gathered our supplies and got busy making some of the best banana muffins. They were so easy to make and all of my girls enjoyed them. One even requested them for her birthday instead of a traditional cake. Hmm... I might consider that. :) I am sharing the recipe below.

Yummy Potato Soup Recipe

Brrr... It's cold out there today. We have been enjoying the day inside, staying warm. I managed to get a fire going in the fireplace and a huge pot of potato soup cooking. I seriously love potato soup and we are patiently waiting for my hubby to arrive, so we can eat this delicious dinner together.

Below you will find an incredibly easy and tasty potato soup recipe and a printable.

Enjoy!

Sometimes we leave the peelings on. If you do, make sure you scrub them well.

Place potatoes in a large pot with sliced onion and celery if desired.

Add water, almost to top of potatoes

Bring to a boil, lower heat, cover and simmer until all of the vegetables are tender.

Add enough milk to thin to desired thickness

Easy Peasy Chocolate Peanut-Butter No Bake Cookie Recipe

Ingredients:
2 cups sugar
4 tablespoons cocoa
1 stick butter
1/2 cup milk
1 cup peanut butter
1 tablespoon vanilla
3 cups oatmeal
Waxed paper

Directions:
In a pan bring to a boil, the sugar, cocoa, butter and 1/2 cup of milk. Let boil for 1 minute then mix in the peanut butter, vanilla and oatmeal.  Next, drop mixture by the spoonfuls onto a sheet of waxed paper, or in our case foil, until cooled and hardened.

This recipe is a favorite in our home, mainly because they are so easy to make. The only thing hard about this recipe is the willpower it takes from eating all of them in one setting. :)  Enjoy!

Kitchen Helper

Wanna teach your children Language, Reading, Math, and Science in the Kitchen?

Let them help you cook!

I'm learning to make the most of this everyday teaching opportunity. Not only are you spending quality time, but your child is also learning. I'm sure, like me, you could also use the extra help. ;)

A few weeks ago, after making cupcakes, we cut out the box and placed it on the side of our refrigerator. I did this so the girls would learn to read the words and remember them. A great learning to read strategy.

Today my oldest asked to make brownies. Yummy! It was fine by me. I watched as she read what she would be needing and gathered all the materials up. Great bonding and learning time and the brownies smelled and tasted Delicious!
